Written Paper– Read and Follow this entire guideline for this major
paper.
1. Title Page including all standard information and class section.

4. RESEARCH PAPER: Minimum length: 6 pages (max. of 10 pages), 1 inch

Project. Your reflection is not included in the page length requirement. Writing
composition skills will be evaluated.
*Notice*: If your paper is insufficient in length and depth, you will NOT earn a good
grade. Journal articles must be from 2012 to present time. Please see me in person for
exceptions. Specific guidelines for the paper and menu are detailed below:
A. Use and cite from a minimum of 4 Peer-Reviewed Journals e.g., Journal of the
AND, Am. Journal of Clinical Nutrition, New Eng. Journal of Medicine, etc.
(Peer review: editors of academic journals keep quality high and assure that poorly done
research is not published. Experts on the topic critique articles that authors propose.
Editors consider critiques, ask authors to make revisions, and then decide whether to
publish the article).
B. Mandatory use of Nutrition Care Manual and/or Pedi Nutrition Care Manual
C. Your textbook as well as Government, University and Med School websites may
provide helpful information to help you understand the topic but cannot be cited
or included on the Works Cited Page. Must use > 4 Peer-Reviewed journal
articles PLUS AND Nutr. Care Manuals for your information in the paper.
D. AMA format for citation & references. Works Cited page. Include citations as
appropriate in the body of paper. Refer to Perdue OWL for AMA format.
E. Paper organization:
1. Introduction: Briefly discuss the medical condition first
2. Research Paper Content- disease/disorder
Include the latest evidence-based, research on the medical condition Thorough,
detailed review of the disease/disorder, considering causation,
pathophysiology, progression, laboratory values, damage to organs/body
systems. Use most recent research available, not necessarily the reference that
you can find first! At least two references for this portion must be from
peer-reviewed journals and use the AND Nutrition Care Manual Conditions
section as well.
3. Research Paper Content-Medical Nutrition Therapy (MNT)
Thorough discussion of MNT, including controversies and/or recent changes in
recommended MNT based on the newest research. Include adjunctive
nutritional therapies when appropriate, e.g., probiotics, antioxidants, omega-3
fatty acids. Consider weight changes due to the disease, the potential for
macro and micronutrient deficiencies. Discuss evidence-based rationale for
recommended diet. Include components of the diet: foods included, added or
emphasized and excluded. Explain when necessary. Discuss any current
controversies about diet recommendations. At least two references for this
portion must be from peer-reviewed journals and use the AND Nutrition Care
Manual Diet Education section as well.

paper. Textbook can be used for your own understanding only. Do not
use this information in your paper unless you see the same information
in an original journal article.
3. Use of the NCM is required but does not count towards the 4 articles.
F. Prepare 1-day menu with 3 meals, 2 snacks: Creativity and disease
appropriateness will be assessed. Use as a basis for the menu
www.choosemyplate.gov/MyPlate-Daily-Checklist-input (you will have to add fats to
the diet): Complete Food Plan on 2nd page, adding in fats as appropriate. Print and
submit both pages. Don’t forget add-ons such as oil to cook with.
a. ESHA Analysis: Establish fictional patient. Print two reports: Bar Graph and
Pie Chart.
b. Complete and print the MyPlate information as detailed above. Staple reports to
paper.
c. Print out your menu that is written in a professional manner and staple to paper.
d. Do not print or include food lists.
Make every effort to meet all your client’s needs for macronutrient distribution and
micronutrients! Accepted range for micronutrients: 75-250% of recommended.
In paragraph form, discuss recommendations for calories and other nutrients that are
central to the condition, such as Protein, CHO, fiber or sodium. For all nutrients: If
you are unable after several menu revisions, to meet goals for a few of the nutrients,
write a brief essay listing which foods could be added to the diet on other days to supply
more of those nutrients. If you don’t think this is feasible, you might suggest vitamin
or mineral supplementation. Be specific. Beware of making erroneous statements.
Example: “kale is an excellent calcium source”. Look up the actual grams of the
nutrient and compare to a rich food source for that nutrient before you make such a
statement.
Print rubric on next page and staple it in to your project before
submitting.
